Diet recipe: Zucchini and chicken casserole

Zucchini and chicken casserole

List of ingredients:
- 3 zucchinis – about 1,5lbs
- 2 boneless skinless chicken breasts, minced
- 1 big onion, chopped
- 2 garlic cloves, chopped
- 4,5oz grated low-fat cheese
- salt, black pepper
- 1 tbs of soy sauce
- 1 tsp of sambal ulek sauce
- 1 cup of tomato paste
- fresh herbs: oregano, basil, thyme, chopped
- 1 tbs olive oil
Wash and peal the zucchinis, cut in 1 cm slices. Spray casserole dish with non-stick spray. Layer zucchinis, season with salt, black pepper and half of chopped herbs. Heat olive oil on a frying pan. Put minced chicken breasts, stir for about 3 min. Add soy sauce and sambal ulek sauce, stir for 1 min. Add onion and garlic, stir for 3 min. Than add ½ cup of water, tomato paste and the rest od herbs. Mix it all together. Put this mixture over zucchinis, sprinkle with cheese. Bake in 390F for about 25-30 min
